Chicken & Dumplings!

What’s for dinner???

The dreaded question!!!

Well…I knew I wanted protein packed chicken of course! But Jay is so tired of my grilled chicken. So I thought back to some of our old favorites…and made Chicken and dumplings!

I decided to bake the chicken first with some poultry seasoning, garlic, a dash of salt and some pepper. It went in the dutch oven to bake for 35 minutes at 350 degrees. I broke the chicken breasts into large chunks and put a container of chicken stock in the panand put it on the stove top to boil.

The dumplings I made with 2/3 cup flour (I know I used icky white flour! Eww!), 1 teaspoon baking powder, a dash of salt, 1/4 cup milk, 2 tablespoons oil, some basil and parsley. I stirred the dumpling mix together and dropped it by the spoonful onto the boiling chicken & stock. I put the lid on the dutch oven and reduced the heat for 12 minutes.

I served this with some mixed veggies.

It was a hit! Jay said it was “really good!”

Dinner with not alot of fuss or mess…and the best part…with items we already had at home!!!
