Weekly Food Prepping!

Is Sunday again!

And it’s a typical Michigan Fall day! Rainy and cool!

So what’s a girl to do on a day like today? I had some new recipes from Pinterest I wanted to try so I decided to do some meal prepping!

I LOVE the new sous vide egg bites at Starbucks…so I scoured Pinterest for a copycat recipe. I found several different versions and kind of combined some of those recipe ideas. Let’s just say they were good but not the Starbucks’ delishiousness I was dreaming of. We’ll eat them and try again next weekend.

I also found a recipe for low carb almond cookies I wanted to try…total bust there! But again…we’ll eat them.

We had some leftover chili Jay made the other night (I begged him to make some…he makes the best chili!) So I made a lunch for each of us from that. I also made some greek yogurt/sugar free jello protein cups. There was some ground beef, chicken and fish fillets in the freezer so I put those in the fridge to thaw for easy protein for our next 3 dinners.

Then I found some carrots! I decided to chop those and make some homemade reduced fat dill dip! The quick and easy recipe for that is:

1 cup light Hellman’s mayonnaise

1 cup light sour cream

1/2 teaspoon season salt

1/2 teason parsley

1/2 packet stevia

1 teaspon onion powder

1 tablespoon dried dill weed

1 tablespoon dried onion

Mix well and refrigerate for flavors to blend. Enjoy with veggies, crackers or pita chips of your choice!
