Fabulous Fall Chili

Today was the same old “What’s for dinner?” routine. Except this time the hubby said he wanted chili! Anyone who knows me knows 1) I eat ALOT of protein and 2) I LOVE chili! I prefer when he makes the chili since he is so good at it…but he’s at work.

I like to make chili with extra lean ground beef. (Side note: Did you know the ground beef in the large bulk packages in the meat section are actually leaner than the grass feed beef 3 packs they sell?) I also prefer to use black beans compared to kidney beans or chili beans because they have a slightly higher protein content. We buy most of our spices in bulk, so I use by own combination of spices to flavor my chili.

The recipe is super simple! Here it is:

1 pound lean ground beef cooked and drained
2 cans diced tomatoes
2 can black beans
1 can tomatoe sauce
1 cup onion
1 cup green pepper
5 tablespoons chili powder (you can add more or less)
3 tablespoons garlic powder…I was out of actual garlic tonight
2 tablespoons cilantro

Combine all and cook on medium heat until veggies are tender.

I like to serve with avocado, tortilla chips,cheese and sour cream.
